Italian Fried Green Tomatoes

Green Tomatoes Italian Style

Ingredients

  1. 4 Large green tomatoes
  2. 4 eggs
  3. 1 cup flour
  4. 1/2 cup bread crumbs
  5. 1/2 cup cornmeal
  6. 1/4 cup grated Romano or Parmesan cheese
  7. 2 tsp white or black pepper
  8. 2 clove chopped garlic
  9. 1 tsp sea salt
  10. 2 cups of vegetable oil for frying
  11. Fresh basil for garnish
  12. 1/4 cup of shaved Romano or Parmesan cheese for garnish

Directions

  1. Slice tomatoes about 1/2 inch thick in circles, place on paper towels to dry.
  2. You will need three shallow dishes to dip the slices in before frying, make sure they are wide enough to accommodate the whole slice of tomato.
  3. Add flour to one shallow dish. Add bread crumbs, cornmeal, cheese, garlic, pepper and salt to another shallow dish (combine these ingredients), crack the eggs into the remaining shallow dish and scramble lightly with a fork.
  4. Heat oil in large frying skillet to about 350 degrees.
  5. Dip the tomato slices first in flour, then the egg, then the breadcrumb mixture then add the hot oil in skillet. Fry to a golden brown on each side and then place them on dry paper towels to drain remaining oil.
  6. Serve with a light marinara, pesto dipping sauce or just by themselves with some fresh basil and shaved Romano or Parmesan cheese.

    Note: • 4 Large green tomatoes (any variety will do but ones similar to beefsteak hold up better)
